apple cider mimosa - featured image

A crisp, bubbly fall cocktail made with apple cider and dry sparkling wine, finished with a cinnamon sugar rim. Perfect for brunch, Thanksgiving, or cozy sweater weather.

Ingredients

Scale
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon water
  • 4 ounces chilled apple cider
  • 4 ounces chilled champagne or dry sparkling wine
  • Ice cubes (optional)
  • Apple slices or cinnamon sticks (for garnish)

Instructions

  1. In a small shallow dish, combine 1/4 cup granulated sugar and 1 tablespoon ground cinnamon. Stir with a fork until evenly mixed.
  2. In another small dish, mix 1 tablespoon honey (or maple syrup) with 1 tablespoon water. Stir until well combined.
  3. Take a champagne flute or your chosen glass. Dip the rim into the honey-water mixture, rotating gently to coat the entire rim. Let any excess drip off.
  4. Dip the rim into the cinnamon sugar mixture, rotating to coat evenly. Lift the glass and gently tap it on the edge of the dish to remove loose sugar. Set upright and let the rim set for about 30 seconds.
  5. Make sure your apple cider and sparkling wine are both well-chilled.
  6. Carefully pour 4 ounces (about 1/2 cup) of chilled apple cider into the prepared glass. Pour slowly to avoid disturbing the cinnamon sugar rim.
  7. Slowly top the glass with 4 ounces (about 1/2 cup) of chilled champagne or dry sparkling wine. Pour it down the side of the glass rather than directly into the center to preserve the bubbles.
  8. Add a thin apple slice or a cinnamon stick to the glass for garnish. If using ice, add it now. Serve immediately.

Notes

For a non-alcoholic version, replace champagne with sparkling water or non-alcoholic sparkling wine. For a sweeter rim, use brown sugar instead of white sugar. The cinnamon sugar rim can be prepared up to an hour in advance. Always pour cider first, then wine, to preserve bubbles.
