Instructions

  1. Peel sweet potatoes and cut into 1-inch chunks. Place in a large pot and cover with cold water by about an inch. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to a simmer. Cook for 15-20 minutes until fork-tender. Drain well and let sit in a colander for a minute to steam off excess moisture.
  2. Return drained sweet potatoes to the pot or transfer to a large mixing bowl. Mash with a potato masher until mostly smooth, or use a hand mixer on low speed for a creamier texture. Let cool for about 5 minutes.
  3. Add melted butter, 1/2 cup brown sugar, beaten eggs, milk, vanilla, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Stir until well combined and smooth.
  4. In a medium bowl, combine chopped pecans, 1/2 cup brown sugar, and flour. Add cold butter cubes and use a pastry cutter or fingertips to work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining. Do not overwork.
  5. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray. Spread the sweet potato mixture evenly in the dish. Sprinkle the pecan topping over the top, covering completely. Do not press down.
  6. Bake for 30-35 minutes until the topping is golden brown and the filling is bubbling around the edges. If the topping browns too quickly, tent loosely with foil. Let rest for 10 minutes before serving.
