  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) light brown sugar, packed
  • 1 large egg, room temperature

  • 1 ¾ cups (220 g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (optional)
  • ¼ cup (50 g) granulated sugar (for rolling)
  • 2 tablespoons ground cinnamon (for rolling)

Instructions

  1. Reduce the apple cider: Pour 1 cup apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until reduced to about ¼ cup thick syrup (12-15 minutes). Stir occasionally. Remove from heat and let cool completely.
  2. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  3. In a medium bowl, whisk together flour, baking soda, baking powder, salt, 1 teaspoon cinnamon, and nutmeg. Set aside.
  4. In a large bowl, beat softened butter, ¾ cup granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
  5. Beat in egg and vanilla extract until smooth and creamy.
  6. Add cooled apple cider syrup and beat until incorporated.
  7. Gradually add dry ingredients to wet mixture, mixing on low speed until just combined. Dough will be soft and slightly sticky.
  8. Chill dough in refrigerator for 20-30 minutes (optional but recommended for thicker cookies).
  9. In a small bowl, mix ¼ cup granulated sugar with 2 tablespoons cinnamon for coating.
  10. Using a cookie scoop or tablespoon, portion about 1.5 tablespoons of dough per cookie. Roll into balls, then coat in cinnamon sugar mixture.
  11. Place dough balls 2 inches apart on prepared baking sheets.
  12. Bake for 10-12 minutes, until edges are set and lightly golden but centers still look soft and puffy.
  13. Let cookies rest on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Watch the cider reduction closely to avoid burning. Cool the reduced cider completely before adding to butter mixture. For thicker cookies, chill dough for 20-30 minutes. Underbake slightly for chewy texture. Cookies taste even better the next day.
