  • 8 oz cream cheese, softened to room temperature
  • 1 cup sour cream, divided
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons fresh lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • Optional toppings: chopped fresh cilantro, sliced green onions, diced jalapeño, smoked paprika

Instructions

  1. Preheat oven to 350°F (175°C). Ensure cream cheese is at room temperature.
  2. Drain and rinse black beans in a colander under cold water for 30 seconds. Shake off excess water.
  3. In a food processor, combine black beans, softened cream cheese, 3/4 cup sour cream, shredded Monterey Jack cheese, lime juice, cumin, chili powder, garlic powder, salt, and pepper. Reserve remaining 1/4 cup sour cream for the spider web.
  4. Pulse 5-6 times to break down ingredients, then process continuously for 30 seconds. Scrape down sides and process another 20-30 seconds until smooth and creamy. Adjust seasoning to taste.
  5. Transfer mixture to an oven-safe serving dish (9-inch pie plate or similar) and spread into an even layer about 1 inch thick.
  6. Bake for 15-18 minutes until hot throughout and edges just start to bubble. Do not brown the top.
  7. While dip bakes, prepare spider web sour cream: Place reserved 1/4 cup sour cream in a small bowl. If too thick, stir in 1 teaspoon milk or water to thin slightly.
  8. Remove dip from oven and let cool 2-3 minutes until warm but not bubbling hot.
  9. Create spider web pattern: Spoon reserved sour cream into center of dip and gently spread into a 3-inch circle. Using a toothpick, drag outward from center to edge to create 8-10 spokes. Then drag toothpick in curved lines between spokes, starting from center and working outward, to create web arcs. Wipe toothpick clean between arcs for crisp lines.
  10. Let dip rest 5 minutes before serving. Garnish with optional toppings if desired.

Room temperature cream cheese is essential for smooth texture. Let dip cool 2-3 minutes before adding sour cream web to prevent melting. For best results, draw web just before serving. Dip can be prepared up to 2 days in advance (without web) and baked before serving. Leftovers keep refrigerated for up to 4 days.
