Best Easy Baked Apple Cider Donuts with Cinnamon Sugar

These soft, cakey baked apple cider donuts are rolled in a warm cinnamon-sugar coating and packed with fresh apple cider flavor. Ready in under 30 minutes, they’re the perfect fall treat for brunches, gatherings, or cozy mornings.

  • ¾ cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

  • 2 large eggs, room temperature
  • ½ cup packed light brown sugar
  • ⅓ cup vegetable oil
  • ½ cup fresh apple cider (not reduced)
  • 1 teaspoon vanilla extract
  • ½ cup unsalted butter, melted (for coating)
  • ¾ cup granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 6-cavity donut pans with baking spray.
  2. In a large bowl, whisk together flour, ¾ cup granulated sugar, baking powder, baking soda, 1 teaspoon cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk eggs until light and frothy, about 1 minute. Add brown sugar and whisk vigorously for another minute. Stir in vegetable oil, apple cider, and vanilla extract until well combined.
  4. Pour wet ingredients into dry ingredients and stir with a rubber spatula until just combined (a few streaks of flour may remain). Let batter rest for 5 minutes.
  5. Transfer batter to a piping bag or zip-top bag with corner snipped. Pipe batter into prepared donut cavities, filling each about ⅔ full.
  6. Bake for 10-12 minutes, until donuts spring back when touched and a toothpick inserted comes out clean or with a few moist crumbs.
  7. Let donuts cool in pan for 5 minutes, then turn out onto a cooling rack. Cool for another 5-10 minutes until warm but not hot.
  8. While donuts cool, melt butter in a small bowl. In a separate shallow bowl, mix together ¾ cup granulated sugar and 2 teaspoons cinnamon.
  9. Working one at a time, brush each donut all over with melted butter, then toss in cinnamon sugar mixture to coat evenly. Place on a clean rack or plate.
  10. Serve immediately. Best eaten the day they are made.

Notes

For best results, use fresh unfiltered apple cider. Do not overmix the batter. Let donuts cool properly before coating to ensure the cinnamon sugar sticks. Store uncoated donuts in an airtight container at room temperature for up to 2 days; coat just before serving. Freeze uncoated donuts for up to 3 months.
