  • ¼ cup packed brown sugar
  • 1 tablespoon lemon juice

  • 1 teaspoon vanilla extract
  • ¾ cup old-fashioned rolled oats
  • ½ cup all-purpose flour
  • ½ cup packed brown sugar
  • ¼ cup unsalted butter, melted
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 can (8-count) refrigerated cinnamon rolls (e.g., Pillsbury Grands!)
  • Reserved icing from cinnamon rolls

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray.
  2. In a large bowl, combine chopped apples, granulated sugar, brown sugar, lemon juice, cornstarch, cinnamon, and vanilla extract. Toss to coat evenly and let sit for 5 minutes.
  3. In a medium bowl, whisk together rolled oats, flour, brown sugar, cinnamon, and salt. Pour in melted butter and stir with a fork until clumps form.
  4. Spread apple mixture evenly in the prepared baking dish. Cut each cinnamon roll into quarters and scatter over the apples. Sprinkle oat crumble topping evenly over the top.
  5. Place dish on a baking sheet. Bake for 35-40 minutes, until filling is bubbling and crumble is golden brown. Tent with foil if browning too quickly.
  6. Remove from oven and let cool for 5 minutes. Drizzle reserved cinnamon roll icing over the warm crisp.
  7. Serve warm, optionally with vanilla ice cream or whipped cream.

For best results, use a mix of sweet and tart apples like Honeycrisp and Granny Smith. Let the crisp rest for 5-10 minutes after baking to allow the filling to set. Store leftovers covered in the refrigerator for up to 4 days.
