Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle of the oven.
  2. Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.
  3. Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat.
  4. Sear the chicken thighs, skin-side down, for 4-5 minutes until the skin is golden and crispy. Flip and sear the other side for 2 minutes. Transfer to a plate.
  5. In a small saucepan over medium heat, combine honey, minced garlic, soy sauce, rice vinegar, sriracha, butter, and grated ginger. Whisk until the butter melts and everything is combined, about 2 minutes.
  6. Add the cornstarch slurry to the sauce. Whisk constantly for 1-2 minutes until the sauce thickens and becomes glossy. Remove from heat.
  7. Arrange the seared chicken thighs skin-side up in your baking dish or oven-safe skillet. Pour about half the sauce over the chicken, using a pastry brush to coat each piece evenly. Reserve the remaining sauce.
  8. Bake for 25 minutes at 400°F.
  9. Remove from the oven and brush on the remaining sauce. Return to the oven and bake for another 5-7 minutes until the glaze is sticky and caramelized. Internal temperature should reach 165°F (74°C).
  10. Optional: Broil for 1-2 minutes at the end for extra stickiness. Watch closely.
  11. Let rest for 5 minutes before serving.
  12. Garnish with sesame seeds and green onions right before serving.
