Ingredients

Scale
  • 68 slices prosciutto
  • 46 ounces salami (hard or Genoa)
  • 46 ounces pepperoni
  • 4 ounces capicola or soppressata (optional)
  • 46 ounces aged cheddar
  • 1 small wheel brie or camembert
  • 4 ounces goat cheese log
  • 4 ounces smoked gouda or manchego
  • 1 cup red grapes
  • 1/2 cup dried apricots or figs
  • 1/2 cup black olives (kalamata or Castelvetrano)
  • 1 apple (sliced, tossed in lemon juice)
  • 2030 assorted crackers
  • 1 small baguette (sliced into 1/2-inch rounds)
  • 810 breadsticks (optional)
  • 2 tablespoons honey
  • 1/4 cup fig jam or red pepper jelly
  • 1/2 cup marinated artichokes or roasted red peppers
  • 1/2 cup nuts (almonds or walnuts, optional)
  • Edible eyeballs (optional)
  • Black sesame seeds or poppy seeds (for garnish)
  • Fresh rosemary or thyme sprigs (for garnish)

Instructions

  1. Prep your ingredients: Take cheeses out of the refrigerator 30 minutes before serving. Wash and dry grapes and apple; slice apple into thin wedges and toss with lemon juice. Slice baguette into 1/2-inch rounds; toast if desired.
  2. Arrange the skull shape: Place the skull-shaped board on a flat surface. Put the brie wheel in the center of the forehead area, goat cheese log in the nose area, and aged cheddar cubes along the jaw line.
  3. Add the meats: Fold or roll prosciutto into loose ribbons and place in the cheek areas. Fold salami into quarters and arrange near prosciutto. Scatter pepperoni around the edges.
  4. Fill in with fruits and vegetables: Place clusters of red grapes in the eye socket areas. Arrange dried apricots or figs around the edges. Scatter black olives in small groups. Place apple slices in the mouth area, curving to follow the jawline.
  5. Add crackers and bread: Fill remaining empty spaces with crackers and baguette slices in small clusters, leaving some breathing room so the skull shape remains visible.
  6. Add spreads and extras: Pour honey into a small ramekin and place near the brie. Spoon fig jam into another ramekin and place near the aged cheddar. Arrange marinated artichokes or roasted red peppers in small piles. Scatter nuts in remaining gaps.
  7. Garnish and final touches: Sprinkle fresh rosemary or thyme sprigs around the board. Place edible eyeballs strategically. Dust goat cheese with black sesame seeds or poppy seeds. Step back and assess; fill any empty spots with extra crackers or nuts.
  8. Serve immediately or refrigerate: If serving within an hour, leave at room temperature. If prepping ahead, cover loosely with plastic wrap and refrigerate. Remove from fridge 30 minutes before serving to let cheeses come to room temperature.

Notes

For best flavor, let cheeses come to room temperature before serving. Don’t overcrowd the board; leave about 20% visible. Cut cheese at different angles for visual variety. Use the ‘rule of threes’ when arranging ingredients. Always have extra crackers and bread on hand. Prep everything before guests arrive.
