Best Healthy Pumpkin Oat Muffins (Easy & Honey-Sweetened)

These healthy pumpkin oat muffins are naturally sweetened with honey, made with wholesome oats, and incredibly moist. Perfect for fall gatherings, they’re simple enough for a weekday breakfast but impressive enough for a dinner party spread.

  • 1 ½ cups (135g) rolled oats
  • 1 cup (245g) pumpkin puree
  • ⅓ cup (110g) honey
  • 2 large eggs, room temperature
  • ¼ cup (60ml) coconut oil, melted
  • ¼ cup (60ml) milk (dairy, almond, or oat)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup chopped pecans, walnuts, or dark chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease cups lightly with coconut oil.
  2. In a food processor or high-speed blender, pulse rolled oats until they resemble a coarse flour, about 10-15 seconds.
  3. In a large bowl, whisk together oat flour, baking soda, baking powder, pumpkin pie spice, cinnamon, and salt.
  4. In a medium bowl, whisk pumpkin puree, honey, eggs, melted coconut oil, milk, and vanilla extract until smooth.
  5. Pour wet mixture into dry ingredients. Fold gently with a rubber spatula until just combined—a few lumps are fine.
  6. If using mix-ins, fold them in now.
  7. Divide batter evenly among 12 muffin cups, filling each about ¾ full.
  8. Bake on middle rack for 18-22 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs.
  9. Let muffins cool in tin for 5 minutes, then transfer to a cooling rack. Wait at least 10 minutes before serving.

Notes

Don’t overmix the batter—lumps are fine. Use room temperature ingredients to prevent coconut oil from seizing. For vegan version, replace honey with maple syrup and use flax eggs. For gluten-free, use certified gluten-free oats. Muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 3 months.
