  • 3 tablespoons granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and 3/4 cup granulated sugar until light and fluffy, about 2-3 minutes.
  3. Beat in pumpkin puree, egg, and vanilla extract until smooth.
  4. In a medium bowl, whisk together flour, cream of tartar, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed until just combined. Do not overmix.
  6. In a small bowl, stir together 3 tablespoons sugar and 1 tablespoon cinnamon for coating.
  7. Scoop about 1.5 tablespoons of dough, roll into a ball, then coat in cinnamon sugar mixture. Place on prepared baking sheets, spacing 2 inches apart.
  8. Bake for 10-12 minutes, until edges are set and tops are slightly crackled. Centers will look soft.
  9. Let cookies rest on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not use pumpkin pie filling; use 100% pure pumpkin puree. Cream of tartar is essential for the classic snickerdoodle tang. If dough is too sticky, add an extra tablespoon of flour. For uniform cookies, use a 1.5-tablespoon cookie scoop. Cookies freeze well for up to 3 months.
