Ingredients

Scale
  • 1 ½ cups all-purpose flour (spooned and leveled)
  • ½ cup powdered sugar
  • ¾ cup unsalted butter, cold and cut into small cubes
  • ¼ teaspoon salt
  • ¾ cup pure maple syrup
  • ½ cup packed light brown sugar
  • 2 large eggs, room temperature
  • 3 tablespoons unsalted butter, melted and slightly cooled
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • 2 cups pecan halves

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving overhang on two sides. Lightly spray with nonstick cooking spray.
  2. In a food processor, combine flour, powdered sugar, and salt. Pulse to mix. Add cold butter cubes and pulse 10-12 times until mixture resembles coarse sand with some pea-sized butter pieces. Do not overprocess.
  3. Press mixture evenly into prepared pan using a flat measuring cup. Bake for 15-18 minutes until lightly golden around edges. Set on a cooling rack; keep oven on.
  4. In a medium bowl, whisk together maple syrup, brown sugar, and eggs until smooth. Whisk in melted butter, bourbon, and vanilla until combined and glossy.
  5. Spread pecan halves evenly over warm crust. Pour filling over pecans without stirring.
  6. Bake for 25-30 minutes until filling is set around edges and slightly jiggly in center. If browning too quickly, tent with foil for last 10 minutes.
  7. Cool in pan on a wire rack for at least 2 hours at room temperature, then refrigerate for 1-2 hours until fully set.
  8. Use parchment overhang to lift slab out of pan. Slice into 16 squares with a sharp knife, wiping blade clean between cuts.

Notes

Do not skip chilling the bars before slicing for clean edges. For a flakier crust, chill the pressed crust in the freezer for 10 minutes before baking if your kitchen is warm. Toast pecans at 350°F for 5-7 minutes for deeper flavor. Use room temperature eggs to avoid lumpy filling. Start checking bars at 22 minutes due to oven variations. Use a sharp knife for slicing; run under hot water and wipe dry between cuts.
