This no-knead banana bread with chocolate chunks is incredibly tender, moist, and studded with gooey pockets of dark chocolate. It comes together in one bowl with no mixer required, making it the perfect easy bake for busy mornings or last-minute gatherings.

  • 3 large ripe bananas, mashed (about 1½ cups)
  • 2 cups (240g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • ½ cup (113g) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (175g) dark chocolate chunks
  • ¼ cup (60ml) plain yogurt or buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center. Line your 9×5-inch loaf pan with parchment paper, leaving some overhang on the long sides for easy lifting.
  2. In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth. A few small lumps are fine.
  3. Add the melted butter, eggs, vanilla extract, and yogurt to the mashed bananas. Stir until well combined.
  4. In a small bowl, whisk together the flour, baking soda, and salt.
  5. Add the flour mixture to the banana mixture. Stir gently with a spatula until just combined. Do not overmix—a few streaks of flour are fine.
  6. Reserve about ¼ cup of chocolate chunks for topping. Gently fold the rest into the batter.
  7. Pour the batter into the prepared loaf pan and spread evenly. Sprinkle the reserved chocolate chunks on top.
  8. Bake for 55-65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top is browning too quickly, tent loosely with foil after 40 minutes.
  9. Let the bread cool in the pan for 15 minutes, then lift it out using the parchment paper and transfer to a cooling rack. Cool completely before slicing.

Notes

For best results, use very ripe bananas with brown spots. Do not overmix the batter. Let the bread cool completely before slicing for clean slices. The bread tastes even better on day two.
