This quick baked buffalo chicken dip is a creamy, spicy, and cheesy crowd-pleaser that comes together in just 30 minutes. Perfect for game days, parties, or a quick weeknight snack, it uses simple ingredients and delivers big flavor without the fuss.

Ingredients

Scale
  • 8 oz cream cheese, softened
  • ½ cup buffalo wing sauce (e.g., Frank’s RedHot Original)
  • ½ cup ranch or blue cheese dressing
  • 1 cup shredded cheddar cheese, divided
  • 2 cups cooked, shredded chicken (e.g., rotisserie chicken)
  • Celery sticks, carrot sticks, and tortilla chips for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Soften the cream cheese: if not at room temperature, microwave for 15-20 seconds on 50% power until soft but not melted.
  3. In a mixing bowl, combine the softened cream cheese, buffalo wing sauce, and ranch or blue cheese dressing. Stir until smooth and well combined.
  4. Add the shredded chicken and ¾ cup of the shredded cheddar cheese to the bowl. Stir until everything is evenly distributed.
  5. Transfer the mixture to an 8×8 or 9×9 baking dish and spread into an even layer. Sprinkle the remaining ¼ cup of cheddar cheese on top.
  6. Bake for 20-25 minutes, until bubbly around the edges and the cheese on top is melted and lightly browned. For a deeper golden top, broil for the last 1-2 minutes, watching closely.
  7. Let the dip rest for 5 minutes before serving. Garnish with chopped green onions or extra hot sauce if desired. Serve warm with celery sticks, carrot sticks, and tortilla chips.

Notes

For best results, use room-temperature cream cheese to avoid lumps. Do not overmix the chicken to keep some texture. No extra salt is needed as hot sauce, dressing, and cheese contain salt. The dip can be assembled up to 24 hours in advance and refrigerated; add 5-10 minutes to baking time if starting from cold. Leftovers keep in the fridge for up to 4 days; reheat in the oven at 350°F for 10-15 minutes.
