  • 1/2 cup (120ml) whole milk
  • 1/4 cup (60ml) ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/2 cup (120ml) ketchup (for glaze)
  • 1/2 cup (100g) packed brown sugar (for glaze)
  • 1 tablespoon apple cider vinegar (for glaze)
  • 1 tablespoon Dijon mustard (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan with cooking spray or oil.
  2. Optional: In a small frying pan over medium heat, sauté the finely diced onion in a drizzle of olive oil for 4-5 minutes until soft and translucent. Add the minced garlic and cook for 30 seconds until fragrant. Let cool for a few minutes.
  3. In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, milk, ketchup, Worcestershire sauce, thyme, salt, pepper, and the cooled onion-garlic mixture. Mix gently with your hands until just combined. Do not overmix.
  4. Transfer the meat mixture to the prepared loaf pan and press it into an even shape. Bake for 45 minutes.
  5. While the meatloaf is baking, make the glaze: In a small saucepan over medium heat, combine the ketchup, packed brown sugar, apple cider vinegar, and Dijon mustard. Whisk until the sugar is dissolved and the mixture is smooth. Bring to a gentle simmer, then remove from heat.
  6. After 45 minutes, remove the meatloaf from the oven. Spoon or brush about half of the glaze over the top. Return to the oven and bake for another 15-20 minutes, until the internal temperature reaches 160°F (71°C).
  7. Let the meatloaf rest in the pan for 10-15 minutes before slicing.
  8. Slice and serve with the remaining glaze on the side.

Notes

Don’t overmix the meatloaf to keep it tender. Let it rest for 10-15 minutes after baking to retain moisture. For extra stickiness, apply half the glaze during baking and serve the rest on the side. You can line the loaf pan with parchment paper for easy cleanup.
