  • 1/3 cup honey (110 ml)
  • 1/4 cup low-sodium soy sauce (60 ml)
  • 6 cloves garlic, minced
  • 2 tablespoons rice vinegar (30 ml)
  • 1 tablespoon sesame oil (15 ml)
  • 1 tablespoon cornstarch (8 grams)
  • 2 tablespoons water (for cornstarch slurry)
  • Salt and black pepper to taste
  • 1 tablespoon neutral oil (like avocado or canola)
  • Optional: sliced green onions, toasted sesame seeds, red pepper flakes for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Place an oven-safe skillet on the stovetop over medium-high heat.
  2. Pat the chicken thighs dry with paper towels. Season both sides generously with salt and black pepper.
  3. Add the neutral oil to the hot skillet. Place the chicken thighs skin-side down in a single layer. Sear undisturbed for 5-6 minutes until deep golden brown.
  4. Flip the thighs and sear the other side for 3-4 minutes. Transfer to a plate. Pour off all but 1 tablespoon of rendered fat, leaving the browned bits.
  5. Reduce heat to medium-low. Add half the minced garlic and sauté for 30 seconds. Pour in honey, soy sauce, rice vinegar, and sesame oil. Whisk, scraping up browned bits. Simmer for 2 minutes.
  6. Return chicken to the skillet, skin-side up. Spoon some sauce over the tops. Transfer to the oven.
  7. Bake for 25-30 minutes, basting halfway through, until internal temperature reaches 165°F (74°C).
  8. Remove skillet from oven. Transfer chicken to a serving platter. Place skillet on stovetop over medium heat. Stir in cornstarch slurry and remaining garlic. Whisk for 1-2 minutes until sauce thickens.
  9. Pour sauce over chicken. Garnish with green onions, sesame seeds, and red pepper flakes if desired. Serve immediately.
