  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • For the Brown Butter Glaze:
  • ¼ cup (57g) unsalted butter
  • 1 cup (120g) powdered sugar
  • 12 tablespoons milk (preferably whole milk)
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, salt, and chai spice blend. Set aside.
  3. Using a hand mixer or stand mixer, beat the softened butter and brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then stir in the vanilla extract. The batter may look curdled, which is normal.
  5. Gently fold in the mashed bananas using a spatula, being careful not to overmix.
  6. Gradually fold the dry ingredients into the wet batter until just combined; a few streaks of flour are okay.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil after 45 minutes if the top browns too quickly.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. To make the brown butter glaze, melt the butter in a small saucepan over medium heat, stirring constantly until golden brown and nutty smelling (about 4-5 minutes). Remove from heat immediately.
  11. Transfer the brown butter to a bowl and whisk in powdered sugar, 1 tablespoon milk (add more if needed), and vanilla extract until smooth and drizzle consistency is reached.
  12. Drizzle the glaze over the cooled banana bread and let it set for 10-15 minutes before slicing.
