  • ¼ cup (50g) granulated sugar
  • 2 tablespoons (25g) light brown sugar
  • 1 tablespoon (8g) all-purpose flour
  • 1 teaspoon cornstarch
  • 1½ teaspoons ground cinnamon
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup (90g) rolled oats
  • ½ cup (60g) all-purpose flour
  • ½ cup (100g) packed light brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (113g) cold unsalted butter, cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Place a rack in the center of the oven.
  2. Peel, core, and slice 6 medium apples into ½-inch thick pieces.
  3. In a large mixing bowl, combine the sliced apples with ¼ cup granulated sugar, 2 tablespoons light brown sugar, 1 tablespoon all-purpose flour, 1 teaspoon cornstarch, 1½ teaspoons ground cinnamon, 1 tablespoon lemon juice, and 1 teaspoon vanilla extract. Toss until evenly coated. Let sit for 5 minutes.
  4. In a medium mixing bowl, whisk together 1 cup rolled oats, ½ cup all-purpose flour, ½ cup packed light brown sugar, 1 teaspoon ground cinnamon, and ¼ teaspoon salt. Add ½ cup cold, cubed unsalted butter. Use a pastry cutter, two forks, or your fingertips to cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining.
  5. Transfer the apple mixture to an 8×8-inch baking dish, spreading it into an even layer. Sprinkle the oat crumble topping evenly over the apples. Do not press it down.
  6. Place the dish on a baking sheet and bake for 40–45 minutes, or until the topping is golden brown and the apple filling is bubbling around the edges. If the topping is browning too quickly, tent loosely with aluminum foil for the last 10 minutes.
  7. Let the crisp cool on a wire rack for at least 10 minutes before serving.

Notes

For extra-crispy topping, broil on low for the last 1–2 minutes. Use cold butter for the topping and do not overmix. Let apples sit after tossing to release juices. Bake on a sheet pan to catch overflow. For best results, use old-fashioned rolled oats, not quick oats.
