These cinnamon sugar baked pumpkin seeds are a sweet, crunchy fall snack that transforms fresh pumpkin seeds into a caramelized treat. Perfect for cozy nights, Halloween parties, or Thanksgiving leftovers.

  • 1 cup fresh pumpkin seeds (from about one medium pumpkin; you can also use store-bought raw seeds)
  • 2 tablespoons unsalted butter, melted
  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 325°F (163°C). Line a rimmed baking sheet with parchment paper or a silicone mat.
  2. Clean the seeds thoroughly. Place pumpkin seeds in a colander and rinse under cold water, using your fingers to remove any stringy pumpkin pulp. Repeat until water runs clear.
  3. Dry the seeds completely. Spread cleaned seeds on a paper towel or clean kitchen towel and pat them dry. Let them sit for about 5 minutes to air-dry any remaining moisture.
  4. Melt the butter in a medium microwave-safe bowl in 20-second intervals until fully liquid. Let it cool for a minute.
  5. Add the sugar, cinnamon, vanilla extract, and salt to the melted butter. Whisk until well combined and the sugar has mostly dissolved.
  6. Add the dried pumpkin seeds to the butter mixture and stir until every seed is evenly coated.
  7. Pour the coated seeds onto the prepared baking sheet and spread them into a single layer. Avoid clustering.
  8. Bake for 20-25 minutes. After 10 minutes, remove the sheet and stir the seeds, then spread back into an even layer. Return to the oven for another 10-15 minutes, checking at the 20-minute mark. Seeds are done when golden brown and fragrant.
  9. Cool completely on the baking sheet for at least 10 minutes. They will continue to crisp up as they cool.
  10. Once cooled, gently break apart any clusters with your fingers.

Notes

Don’t skip drying the seeds—wet seeds cause steaming and chewy texture. Watch the oven closely as sugar can burn quickly. Let seeds cool completely before storing to maintain crunch. For extra crispiness, bake at 300°F for 5 more minutes if needed.
