Ingredients

Scale
  • 1 lb ground beef (80/20)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 can (10.5 oz) condensed cheddar cheese soup
  • 1 cup milk (whole milk preferred)
  • 1/2 cup heavy cream
  • 1 tbsp Worcestershire sauce
  • 1 tsp yellow mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika (optional)
  • 3 cups frozen shredded hash browns
  • 2 tbsp all-purpose flour
  • 2 tbsp unsalted butter
  • 2 cups shredded sharp cheddar cheese (about 8 oz)
  • 1/2 cup shredded mozzarella cheese
  • Cooked bacon, crumbled (about 4 slices, for topping)
  • Chopped green onions (for topping)
  • Extra shredded cheese (for topping)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it up, for 6-8 minutes. Add diced onion and cook 3-4 minutes until soft. Stir in minced garlic and cook 30 seconds until fragrant.
  2. Transfer the beef and onion mixture to a 6-quart or larger slow cooker using a slotted spoon. Add beef broth, condensed cheddar cheese soup, Worcestershire sauce, yellow mustard, salt, pepper, and smoked paprika. Stir until combined.
  3. Add frozen shredded hash browns (do not thaw) and stir gently.
  4. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours.
  5. About 20 minutes before serving, melt butter in a small saucepan over medium heat. Whisk in flour and cook 1-2 minutes to make a roux. Slowly whisk in about 1 cup of hot soup broth from the crockpot, then pour the mixture back into the slow cooker. Stir well.
  6. Pour in milk and heavy cream. Stir and let cook for another 10-15 minutes on LOW.
  7. Turn slow cooker to WARM or LOW. Gradually add shredded cheddar and mozzarella cheese, a handful at a time, stirring gently until melted.
  8. Taste and adjust salt and pepper if needed. If too thick, stir in a splash of milk. If too thin, cook on HIGH uncovered for 15-20 minutes.
  9. Ladle into bowls and top with crumbled bacon, chopped green onions, and extra shredded cheese. Serve immediately with crusty bread or saltine crackers.

Notes

Shred your own cheese for best melting. Do not thaw hash browns before adding. Add cheese at the end on low heat to avoid graininess. For stovetop version, simmer 25-30 minutes instead of slow cooking.
