Instructions

  1. Prep the potatoes: Peel and dice potatoes into 1-inch cubes. Rinse in cold water to remove excess starch, then drain well.
  2. Start the base: Add diced potatoes, chicken broth, minced garlic, and a generous pinch of salt and pepper to a 6-quart slow cooker. Stir to combine.
  3. Cook low and slow: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are fork-tender.
  4. Mash it up: Use a potato masher to mash the potatoes right in the crockpot, about 8-10 mashes, leaving some chunks for texture.
  5. Add the creamy goodness: Stir in cubed cream cheese until melted, then pour in heavy cream and stir. Add shredded cheddar cheese and stir until melted and smooth.
  6. Season and adjust: Taste and adjust salt and pepper as needed. If too thick, add extra broth or milk; if too thin, cook uncovered for 15-20 minutes.
