  • 2 tablespoons fresh lime juice
  • 1/2 cup canned black beans, drained and rinsed
  • 1 can small black olives, drained
  • 24 tortilla chips (sturdy scoops or rounds)
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon cumin (optional)
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Prep the avocados: Cut the avocados in half lengthwise, remove the pits, and scoop the flesh into a mixing bowl. Add the lime juice immediately to prevent browning.
  2. Mash the guacamole: Using a fork or potato masher, mash the avocado to your desired consistency (chunky is recommended). Add the salt, garlic powder, and cumin, and mix well.
  3. Add the black beans: Fold in the drained and rinsed black beans gently until evenly distributed.
  4. Taste and adjust: Dip a chip in and adjust salt or lime juice to taste.
  5. Assemble the cups: Spoon the guacamole into small cups (3 oz paper cups or shot glasses), filling them about three-quarters full. Smooth the top with the back of a spoon.
  6. Create Frankenstein’s hair: Slice black olives into thin rounds. Place 3-4 olive slices across the top of each cup to create the flat-top hair look.
  7. Add the eyes: Place two olive slices slightly below the hair for eyes. Optionally, add a tiny dab of sour cream or cream cheese for eyeballs.
  8. Insert the tortilla chips: Stick two tortilla chips on either side of the cup to look like neck bolts.
  9. Garnish and serve: Sprinkle chopped cilantro on top. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

For make-ahead, press plastic wrap directly onto the guacamole surface before adding toppings to prevent browning. Store assembled cups in the refrigerator for up to 24 hours, but remove tortilla chips before storing to prevent sogginess. Serve at room temperature after chilling.
