  • 2 cans (15 ounces each) white beans (cannellini, Great Northern, or navy), drained and rinsed
  • 1 large yellow onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 34 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your ingredients: dice onion, carrots, and celery; mince garlic; slice kielbasa into 1/2-inch rounds; drain and rinse white beans.
  2. Heat 1 tablespoon olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add kielbasa in a single layer and cook for 2-3 minutes per side until browned. Transfer to a plate with a slotted spoon.
  3. Reduce heat to medium. Add remaining 1 tablespoon olive oil. Sauté onion, carrots, and celery for 5-7 minutes until softened and onion is translucent.
  4. Add minced garlic and dried thyme; stir constantly for 30 seconds to 1 minute until fragrant.
  5. Pour in 1/2 cup chicken broth and scrape up browned bits from the bottom of the pot. Let simmer for 1 minute.
  6. Add remaining 3 1/2 cups chicken broth, drained white beans, bay leaf, and browned kielbasa. Stir to combine. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 10 minutes.
  7. Remove bay leaf and discard. Taste and adjust seasoning with salt and black pepper. Ladle into bowls, garnish with fresh parsley if desired, and serve hot.

Notes

For a thicker soup, mash half the beans before adding or blend 1 cup of soup with an immersion blender. To make it vegetarian, use plant-based sausage and vegetable broth. Add greens like spinach or kale in the last 2-3 minutes of cooking. Leftovers keep in the fridge for 4-5 days and freeze well for up to 3 months.
