Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat 1 cup softened unsalted butter and 1 cup packed brown sugar together until light and fluffy, about 3-4 minutes with an electric mixer on medium speed.
  3. Beat in 1/4 cup pure maple syrup, 2 large eggs (one at a time), and 1 teaspoon vanilla extract (if using) until fully combined.
  4. In a separate bowl, whisk together 1 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon salt, and optional spices like cinnamon or pumpkin pie spice.
  5. Gradually add the flour mixture to the butter mixture, stirring slowly until just combined. Avoid overmixing.
  6. Stir in 3 cups rolled oats and your choice of optional nuts or dried fruit.
  7. Using a cookie scoop or tablespoon, drop dough balls about 2 inches apart on the baking sheets. Flatten gently if you prefer thinner cookies.
