These cozy maple roasted delicata squash rings are a simple yet stunning fall side dish. Tender squash rings are coated in a sweet maple glaze and roasted until caramelized and crispy-edged, making them an irresistible addition to any meal.

  • 2 medium delicata squash (about 1.5 pounds total)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon cinnamon (optional)
  • 45 sprigs fresh thyme (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the delicata squash: Wash thoroughly and pat dry. Trim off both ends, then slice crosswise into 1/2-inch thick rings. Scoop out seeds and stringy pulp from the center of each ring.
  3. Make the maple coating: In a large mixing bowl, whisk together maple syrup, olive oil, kosher salt, black pepper, and cinnamon (if using).
  4. Toss the squash rings: Add the rings to the bowl and gently toss until evenly coated. Let sit for 2-3 minutes.
  5. Arrange on the baking sheet: Place rings in a single layer, not overcrowded. Drizzle any remaining maple mixture over the top. Tuck thyme sprigs (if using) between rings.
  6. Roast for 15 minutes.
  7. Flip and rotate: Carefully flip each ring over and rotate the baking sheet 180 degrees.
  8. Roast for another 10-15 minutes, until tender and deeply caramelized (total 25-30 minutes).
  9. Cool slightly for 2-3 minutes on the pan, then transfer to a serving platter. Remove thyme sprigs and serve warm. Optionally, sprinkle with flaky sea salt or extra maple syrup.

Notes

For even caramelization, don’t skip flipping the rings halfway through. If rings brown too quickly but aren’t tender, tent loosely with foil for the last 5 minutes. Save the seeds to roast as a crunchy snack. This recipe tastes even better the next day as flavors meld.
