  • 1 cup (120g) walnuts, roughly chopped and toasted
  • 2 medium apples, peeled, cored, and thinly sliced (Honeycrisp or Fuji recommended)
  • 2 tablespoons unsalted butter (for caramelizing apples)
  • 2 tablespoons brown sugar
  • ½ teaspoon ground cinnamon
  • Flaky sea salt, for sprinkling on top

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking pan or line with parchment paper.
  2. Caramelize the apples: Melt 2 tablespoons butter in a skillet over medium heat. Add sliced apples, brown sugar, and cinnamon. Cook, stirring occasionally, until apples soften and turn golden brown, about 8-10 minutes. Remove from heat and let cool slightly.
  3. In a large bowl, whisk together melted butter and maple syrup. Add eggs one at a time, then stir in vanilla extract until smooth.
  4. In another bowl, sift together flour, baking powder, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients, stirring gently until just combined. Avoid overmixing.
  6. Toast walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant. Let cool, then fold into the batter gently.
  7. Pour half the batter into the prepared pan and spread evenly. Spoon caramelized apples over the batter. Dollop remaining batter on top and gently spread over apples.
  8. Bake for 30-35 minutes until edges are golden and a toothpick inserted near the center comes out with moist crumbs.
  9. Cool blondies completely on a cooling rack. Sprinkle flaky sea salt on top.
  10. Slice into squares and serve warm or at room temperature.
