  • 1 tablespoon unsalted butter, melted
  • Coarse sea salt, for sprinkling (optional)
  • 1 cup sharp cheddar cheese, shredded (about 4 ounces)
  • 1/2 cup lager beer (light beer like a pilsner)
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Pinch of cayenne pepper (optional)
  • 23 good-quality bratwurst or weisswurst sausages (about 68 ounces total)
  • 1 teaspoon olive oil
  • 2 tablespoons whole-grain mustard
  • 2 tablespoons spicy brown mustard (or honey mustard)
  • 1/4 cup cornichons or small pickles
  • 1/4 cup pickled red onions (optional)
  • 1 small apple, thinly sliced (Granny Smith recommended)
  • A handful of salted pretzel sticks or twists

Instructions

  1. Preheat your oven to 350°F (175°C). Place the pretzels on a baking sheet lined with parchment paper. If they are dry, lightly brush them with a little water. Bake for 5-7 minutes, just until warm and slightly puffed.
  2. While the pretzels warm, heat a grill pan or skillet over medium-high heat. Add the olive oil. Cook the sausages for 4-5 minutes per side, until deeply browned and heated through (internal temperature of 160°F/70°C for pork). Let rest for a minute, then slice on a bias into 1-inch thick pieces.
  3. In a small saucepan over medium-low heat, warm the beer for about 30 seconds. Do not let it boil. Whisk in the flour until smooth. Cook for 1 minute, stirring constantly.
  4. Reduce heat to low. Add the shredded cheddar cheese a handful at a time, whisking constantly until each addition is fully melted. Stir in the Dijon mustard, garlic powder, and cayenne pepper (if using). Season with a tiny pinch of salt and black pepper. Keep warm on the lowest heat.
  5. Slice the apple into thin wedges. Arrange the cornichons, pickled red onions (if using), and mustards into small ramekins or bowls.
  6. Once the pretzels are warm, remove them from the oven. Immediately brush with melted butter. Sprinkle with coarse sea salt if desired.
  7. Place the wooden board or large platter on the counter. Place the two warm pretzels in the center. Arrange the sliced sausages around the pretzels. Place the ramekins of cheese dip, mustards, and pickles in the gaps. Tuck the apple slices and extra pretzel sticks around the edges to fill empty spaces.
  8. Serve immediately while warm.

Notes

Don’t overheat the beer cheese; melt on low heat. Slice sausages on a bias for better presentation. Warm the ramekins before adding cheese dip to keep it warm longer. Toast extra pretzel sticks for crunch. Use a light lager or pilsner for the cheese sauce, not a dark stout or IPA.
