  • 1 cup (200g) granulated sugar
  • ½ cup (100g) packed light brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder

  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ½ teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup (240ml) pumpkin puree (100% pure pumpkin)
  • ½ cup (120ml) vegetable oil
  • ¼ cup (60ml) milk
  • 1 teaspoon vanilla extract
  • ½ cup (60g) all-purpose flour (for streusel)
  • ¼ cup (50g) packed light brown sugar (for streusel)
  • ¼ cup (50g) granulated sugar (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • Pinch of salt (for streusel)
  • ¼ cup (60g) unsalted butter, melted (for streusel)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, then line with a parchment paper sling hanging over the two long sides.
  2. Mix the dry ingredients: In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt until no lumps remain.
  3. Add the wet ingredients: Make a well in the center of the dry ingredients. Add eggs, pumpkin puree, vegetable oil, milk, and vanilla extract. Stir with a rubber spatula just until no streaks of flour remain. Do not overmix; a few lumps are fine.
  4. Make the streusel: In a small bowl, whisk together flour, brown sugar, granulated sugar, cinnamon, and salt. Pour melted butter over the top and stir with a fork until crumbly.
  5. Assemble the bread: Pour batter into prepared loaf pan and spread evenly. Sprinkle streusel topping evenly over the batter without pressing it down.
  6. Bake for 55 to 65 minutes. At 45 minutes, check the bread; if streusel is browning too quickly, tent loosely with aluminum foil. Bread is done when a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Cool in the pan for 15 minutes, then lift out using parchment sling and transfer to a cooling rack. Cool completely before slicing, about 1 hour.

Notes

Do not overmix the batter to avoid dense bread. Use 100% pure pumpkin, not pumpkin pie filling. Room temperature ingredients blend better. Let bread cool completely before slicing to prevent crumbling. Bread tastes even better on day two. For muffins, bake at 350°F for 18-22 minutes.
