  • 4 tablespoons unsalted butter, softened
  • 68 cloves garlic, minced
  • 2 tablespoons fresh lemon juice (from about 1 lemon)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon kosher salt, plus more for seasoning
  • 1/2 teaspoon freshly ground black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Place a large rimmed baking sheet on the middle rack while it preheats for at least 10 minutes.
  2. Pat the chicken thighs dry with paper towels. This is crucial for crispy skin.
  3. Season the chicken generously with salt and pepper on both sides. Let sit at room temperature while you make the butter mixture.
  4. In a small bowl, combine the softened butter, minced garlic, lemon juice, dried thyme, and dried rosemary. Mix well with a fork until evenly distributed.
  5. Carefully remove the hot baking sheet from the oven. Place the chicken thighs skin-side down on the hot pan. You should hear an immediate sizzle.
  6. Spoon about half the butter mixture over the chicken thighs, spreading it evenly. Reserve the other half for later.
  7. Roast the chicken for 20 minutes. Do not open the oven door during this time.
  8. After 20 minutes, remove the pan from the oven and carefully flip the chicken thighs using tongs. Spoon the remaining butter mixture over the skin side.
  9. Return the pan to the oven and roast for another 15-20 minutes, until the internal temperature reaches 165°F (74°C) at the thickest part, or until the juices run clear.
  10. Let the chicken rest on the pan for 5 minutes before serving.
  11. Garnish with fresh parsley if desired, and spoon any remaining pan juices over the top.

Notes

For the crispiest skin, pat the chicken very dry and preheat the pan. Don’t crowd the pan—leave at least an inch between thighs. Let the chicken rest for 5 minutes before serving to keep it juicy. The garlic butter sauce is liquid gold; spoon it over the chicken before serving.
