Creamy, rich overnight oats with blended banana and melted peanut butter for a velvety texture. A quick, no-cook breakfast that tastes like comfort food but is good for you.

  • 1 cup rolled oats (not instant)
  • 1 cup milk of choice (whole milk, almond milk, or oat milk)
  • 1/2 cup plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons creamy peanut butter (natural or processed)
  • 1 medium ripe banana (heavily speckled or browning)
  • 1 tablespoon maple syrup or honey (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: sliced banana, extra peanut butter (warmed), chopped peanuts or pecans, cinnamon, dark chocolate chips

Instructions

  1. Mash the banana in a medium mixing bowl with a fork until mostly smooth (a few lumps are fine).
  2. Add milk, Greek yogurt, peanut butter, maple syrup, and vanilla extract. Whisk or stir until combined and smooth like a thick smoothie.
  3. Stir in rolled oats and a pinch of salt until every oat is coated and no dry pockets remain.
  4. Divide the mixture evenly into two jars or airtight containers, leaving about an inch of space at the top.
  5. Refrigerate for at least 6 hours, preferably overnight (8 hours is ideal).
  6. In the morning, stir the oats. If too thick, add a splash of milk. Top with desired toppings and serve cold or at room temperature.

Notes

For best texture, use rolled oats (not instant or steel-cut). Reserve a little peanut butter mixture to swirl on top before refrigerating for beautiful ribbons. Oats keep in the fridge for up to 5 days; add toppings just before serving. If too thick, stir in a splash of milk. For warm oats, microwave 45-60 seconds, stirring halfway.
