  • 4 ounces cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1 ½ cups powdered sugar, sifted
  • ½ teaspoon vanilla extract
  • 1 tablespoon milk or heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cornstarch, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Add egg and vanilla extract to butter mixture; beat until combined. Add pumpkin puree and mix until just incorporated.
  5. Add dry ingredients to wet mixture in two additions, mixing on low speed until just combined. Do not overmix.
  6. Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart.
  7. Bake for 10-12 minutes, until edges are set and lightly golden. Let cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  8. For icing: Beat softened cream cheese and butter until smooth. Add sifted powdered sugar and vanilla; beat until combined. Add milk or cream and beat until smooth and spreadable.
  9. Spread icing onto cooled cookies.

Notes

Don’t overmix the dough. Use room temperature ingredients. Pat pumpkin dry if watery. Cool cookies completely before icing. For gluten-free, use 1:1 gluten-free flour blend. For dairy-free, use vegan butter and dairy-free cream cheese.
