Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease generously.
  2. In a large bowl, whisk together 2 cups old-fashioned rolled oats, 1 teaspoon baking powder, 1 ½ teaspoons pumpkin pie spice, ½ teaspoon cinnamon, and ¼ teaspoon salt.
  3. In a medium bowl, combine 1 cup pumpkin puree, 1 cup milk, 1 beaten egg, ⅓ cup maple syrup, 2 tablespoons melted coconut oil, and 1 teaspoon vanilla extract. Whisk until smooth.
