  • 3 tablespoons unsalted butter (42 grams), softened
  • 1/4 cup packed light brown sugar (50 grams)
  • 1 large egg yolk
  • 1/4 teaspoon vanilla extract
  • 3 tablespoons whole milk (45 ml), at room temperature
  • 1 medium apple (about 150 grams), peeled and thinly sliced
  • 1 tablespoon granulated sugar (12 grams)
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon turbinado sugar (or coarse sugar, optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Cut a circle of parchment paper to fit the bottom of a 6-inch cake pan. Grease the pan, place the parchment inside, and grease again.
  2. Peel and core the apple, then slice into thin, even slices (about 1/8-inch thick). In a small bowl, toss the apple slices with 1 tablespoon granulated sugar and 1/2 teaspoon cinnamon. Set aside.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt for about 20 seconds.
  4. In another bowl, beat the softened butter and brown sugar together until light and fluffy (about 2 minutes by hand).
  5. Beat in the egg yolk and vanilla extract until well combined. Add the milk and stir until smooth.
  6. Add the dry ingredients to the wet mixture in two additions, stirring gently with a folding motion until just combined. Do not overmix.
  7. Fold in the cinnamon-sugar coated apple slices until evenly distributed.
  8. Scrape the batter into the prepared cake pan and spread evenly. Arrange a few extra apple slices on top if desired. Sprinkle turbinado sugar evenly over the top.
  9. Bake for 28-32 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with foil for the last 5 minutes.
  10. Let the cake cool in the pan for 10 minutes. Run a thin knife around the edge, invert onto a cooling rack, peel off parchment, and flip right-side up. Cool completely (about 30 minutes) before dusting with powdered sugar.
