A warm, comforting taco soup made with ground beef, beans, corn, and a savory blend of taco and ranch seasonings. Ready in under 30 minutes, this easy weeknight meal is perfect for cozy nights and is a crowd-pleaser.

  • 1 pound ground beef (80/20)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 packet ranch seasoning mix
  • 1 can (15 ounces) diced tomatoes with green chilies (Rotel)
  • 1 can (15 ounces) fire-roasted diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 2 cups low-sodium beef broth
  • Optional toppings: shredded cheddar cheese, sour cream, fresh cilantro, crushed tortilla chips, sliced jalapeño, sliced avocado, lime wedges

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium-high heat, breaking it apart, until browned and no longer pink (6-8 minutes). Drain excess fat, leaving about 1 tablespoon.
  2. Reduce heat to medium. Add diced onion and cook 3-4 minutes until translucent. Add minced garlic and cook 30 seconds until fragrant.
  3. Sprinkle taco seasoning and ranch seasoning over the beef mixture. Stir well and cook for 1 minute to bloom the spices.
  4. Pour in beef broth, scraping the bottom of the pot to release browned bits. Add both cans of diced tomatoes (fire-roasted and with green chilies). Stir.
  5. Gently stir in drained black beans, pinto beans, and corn until evenly distributed.
  6. Increase heat to high and bring to a gentle boil. Reduce heat to medium-low and simmer uncovered for 15-20 minutes, stirring occasionally.
  7. Taste and adjust seasoning if needed (add salt sparingly). Add a squeeze of lime juice or black pepper if desired.
  8. Serve hot with desired toppings.

Notes

For best flavor, use fire-roasted tomatoes and Hidden Valley ranch seasoning. Do not add extra salt until after simmering, as seasoning packets are salty. The soup tastes even better the next day. For a creamy version, stir in 4 oz cream cheese or 1/2 cup heavy cream during the last 5 minutes of simmering. To make vegetarian, substitute ground beef with two cans of black beans and use vegetable broth.
