  • 34 green onions, thinly sliced

Instructions

  1. Prep the chicken: If cooking your own, place 2 large boneless, skinless chicken breasts in a pot, cover with water or broth, bring to a gentle boil, then reduce heat to low, cover, and simmer for 12-15 minutes until internal temperature reaches 165°F. Let rest 5 minutes, then shred with two forks (about 3 cups).
  2. Soften the cream cheese: Remove cream cheese from fridge at least 30 minutes before starting. Cut into cubes to speed softening. (Alternatively, microwave on 50% power for 10 seconds, but do not melt.)
  3. Mix the cream cheese base: In a medium bowl, beat softened cream cheese, ranch dressing, and blue cheese dressing with a hand mixer on medium speed until smooth, fluffy, and combined (about 2 minutes).
  4. Combine in slow cooker: Spray a 3-4 quart slow cooker with non-stick spray. Add shredded chicken, cream cheese mixture, and buffalo wing sauce. Stir with a rubber spatula until chicken is evenly coated.
  5. Add cheese: Fold in 1 cup of shredded cheddar cheese. Reserve remaining 1/2 cup for topping. Stir gently until cheese starts to melt.
