Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge 30 minutes before starting. If forgotten, microwave unwrapped cream cheese for 10-15 seconds until soft but not warm.
  2. Whip the cream cheese base: In a large mixing bowl, add softened cream cheese, powdered sugar, vanilla extract, and sour cream. Beat with an electric mixer on medium speed until smooth and creamy, about 2 minutes. Scrape down sides halfway through.
  3. Add the heavy cream: Pour in cold heavy cream and beat on medium-high speed for 2-3 minutes until mixture is lighter, fluffier, and increased in volume. Stop when soft and pillowy.
  4. Spread the dip: Transfer cheesecake mixture to a serving dish or pie plate. Spread into an even layer, about 1 to 1.5 inches thick.
  5. Add the caramel layer: Drizzle caramel sauce evenly over the top. Gently spread with back of spoon if needed, leaving a small border around the edge.
  6. Sprinkle the toppings: Evenly distribute toffee bits over caramel layer. Add chopped pecans if using. Finish with a light pinch of flaky sea salt.
  7. Chill before serving: Refrigerate for at least 30 minutes to allow flavors to meld and dip to firm up.
  8. Prepare the dippers: Right before serving, slice apples. Toss with lemon juice to prevent browning if desired. Arrange apple slices, graham crackers, pretzels, and cookies around the dip on a platter.

Make sure cream cheese is at room temperature for smooth texture. Do not overwhip the cream to avoid graininess. Use good quality caramel sauce for best flavor. Toast pecans for extra crunch.
