  • 1 cup rolled oats
  • 1 cup milk (any kind)

  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/4 cup heavy cream or full-fat coconut milk
  • 1 tablespoon powdered sugar or maple syrup

Instructions

  1. Simmer the peaches: Drain the canned peaches, reserving 2 tablespoons of juice. In a small saucepan, combine peaches, reserved juice, 1 tablespoon maple syrup, and 1/2 teaspoon vanilla. Simmer over medium heat for 3-4 minutes until softened and syrup thickens. Remove from heat and cool.
  2. Mix the oat base: In a medium bowl, combine rolled oats, milk, Greek yogurt, chia seeds, 1 tablespoon maple syrup, 1/2 teaspoon vanilla, and a pinch of salt. Stir well.
  3. Make the cream layer: In a small bowl, whisk together heavy cream and powdered sugar until slightly thickened.
  4. Layer the jars: Spoon about 1/3 cup oat mixture into each jar. Add 2-3 tablespoons peaches, then a drizzle of cream. Repeat layers, ending with peaches and cream on top.
  5. Refrigerate overnight: Seal jars and refrigerate for at least 6 hours, preferably overnight.
  6. Serve cold or at room temperature: Stir before eating. Microwave 30-45 seconds if desired.

Notes

For best texture, use rolled oats (not quick or steel-cut). Chia seeds are essential for thickness. Simmering peaches prevents watery oats. Layers look best if not pressed down. Keeps up to 5 days in fridge.
