These creamy peanut butter overnight protein oats are a cozy fall breakfast that tastes like peanut butter cookie dough. Made with simple ingredients and just five minutes of prep, they’re perfect for crisp mornings when you want a warm, comforting meal waiting for you.

  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk of choice (whole milk, oat milk, or almond milk)
  • 1/4 cup (60g) plain Greek yogurt
  • 3 tablespoons (48g) creamy peanut butter
  • 1 scoop (about 30g) vanilla protein powder
  • 12 tablespoons (15-30ml) maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • For topping: sliced banana, chopped peanuts, drizzle of peanut butter, sprinkle of cinnamon, dark chocolate chips (optional)

Instructions

  1. Start with your jar or container. Grab a 16-ounce mason jar or any airtight container.
  2. Add the rolled oats. Measure out 1 cup (90g) of rolled oats and pour them into the jar. Don’t pack them down.
  3. Add the chia seeds. Sprinkle in 1 tablespoon (12g) of chia seeds and stir into the oats.
  4. Add the protein powder. Scoop in about 30g of vanilla protein powder, sprinkling it evenly over the oats.
  5. Add the peanut butter. Spoon in 3 tablespoons (48g) of creamy peanut butter. If cold, microwave for 10 seconds to soften.
  6. Add the maple syrup and salt. Drizzle in 1-2 tablespoons (15-30ml) of maple syrup and add a tiny pinch of salt.
  7. Pour in the milk. Add 1 cup (240ml) of your milk of choice and give a quick stir.
  8. Add the Greek yogurt. Spoon in 1/4 cup (60g) of Greek yogurt and stir gently.
  9. Stir everything together until no dry spots or clumps remain. Use the back of a spoon to press lumps against the jar. Stir for 30-45 seconds.
  10. Seal and refrigerate. Put the lid on and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  11. Morning assembly: Take the jar out, stir well. If too thick, add a splash of milk; if too thin, add more oats and let sit 15 minutes.
  12. Add your toppings: sliced banana, chopped peanuts, extra peanut butter drizzle, cinnamon, and dark chocolate chips if desired.
  13. Enjoy immediately cold, or microwave for 30-45 seconds if you prefer warm oats.

Notes

For best texture, use rolled oats (not quick or steel-cut). Stir thoroughly to avoid protein powder clumps. Oats keep in the fridge for up to 5 days. Toppings should be added just before serving. For a dairy-free version, use plant-based milk and yogurt. For gluten-free, use certified gluten-free oats. For vegan, use plant-based protein powder and yogurt.
