Instructions

  1. Prep Your Ingredients (5 minutes): Dice the onion, mince the garlic, drain and rinse the beans, and chop the cilantro. Cube the cream cheese and set it aside to soften slightly.
  2. Sauté the Aromatics (5 minutes): Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the diced onion and cook for 3-4 minutes until translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Bloom the Spices (1 minute): Add the cumin, oregano, chili powder, garlic powder, and a pinch of salt and pepper to the pot. Stir constantly for about 30 seconds until aromatic.
  4. Add the Chicken and Broth (15 minutes): Pour in the chicken broth and add the chicken breasts. Increase heat to high and bring to a boil. Reduce heat to medium-low, cover, and simmer for 12-15 minutes until chicken is cooked through (165°F).

  8. Finish with Green Chiles and Lime (2 minutes): Stir in the diced green chiles, fresh lime juice, and chopped cilantro. Taste and adjust seasoning with salt, pepper, or lime juice as needed.
  9. Simmer and Serve (5 minutes): Let the chili simmer on low for 5 minutes to meld flavors. Serve hot with desired toppings.

Notes

Use room temperature cream cheese to avoid clumping. Do not overcook the chicken; use a meat thermometer for best results. For a thicker chili, simmer uncovered for 5-10 minutes. For a thinner chili, add more broth. This chili tastes even better the next day.
