These crispy buffalo cauliflower bites are a healthier alternative to wings, with a shatteringly crisp exterior and bold, spicy flavor. Perfect for game day, they’re baked not fried and disappear fast.

  • 1 large head of cauliflower (about 45 cups florets)
  • 1 cup all-purpose flour
  • 1 cup milk (dairy or unsweetened almond milk)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 ½ cups panko breadcrumbs
  • ¾ cup buffalo wing sauce
  • 2 tablespoons melted butter (or vegan butter)
  • Optional: ranch or blue cheese dressing, celery sticks, carrot sticks

Instructions

  1. Preheat oven to 450°F (230°C). Line a large baking sheet with parchment paper and place a wire cooling rack on top. Spray the rack generously with non-stick cooking spray.
  2. Wash and thoroughly dry the cauliflower. Cut into bite-sized florets, all roughly the same size. Pat dry again with a paper towel.
  3. In a large bowl, whisk together flour, milk, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth (thin pancake batter consistency). Add a splash more milk if too thick.
  4. Pour panko breadcrumbs into a separate shallow bowl. Set up coating station: cauliflower florets, wet batter, panko crumbs, and prepared baking sheet.
  5. Working in batches, dip each floret into the wet batter, letting excess drip off. Roll in panko, pressing gently to adhere. Place on wire rack in a single layer, not touching. Bake for 20 minutes (par-bake).
  6. While cauliflower bakes, combine buffalo wing sauce and melted butter in a small saucepan over low heat. Stir until butter is melted and sauce is warm. Alternatively, microwave for 30 seconds. Set aside.
  7. Remove baking sheet from oven. Using a pastry brush or spoon, brush each floret with buffalo sauce mixture (even coating, not drowning). Return to oven and bake for another 10-15 minutes until deeply golden and crisp.
  8. As soon as they come out, transfer hot florets to a large bowl. Pour remaining buffalo sauce over top and toss gently with a spatula until well coated.
  9. Serve immediately on a platter with ranch or blue cheese dressing and celery sticks.

Notes

Don’t skip the par-bake—it sets the crust so it stays crunchy after adding sauce. Dry cauliflower thoroughly to prevent batter from sliding off. Use a wire rack for even crispiness. Don’t overcrowd the pan. Work in batches when coating to keep panko dry.
