  • ¼ teaspoon ground nutmeg
  • 1 tablespoon (15 ml) lemon juice
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (90 g) rolled oats (not quick oats)
  • ¾ cup (90 g) all-purpose flour
  • ½ cup (100 g) packed brown sugar (light or dark)
  • ½ cup (1 stick or 113 g) cold unsalted butter, cut into small cubes
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Position a rack in the center of the oven. Place a baking sheet on the rack below to catch any drips.
  2. Prepare the apples: Peel if desired, core, and slice into ¼-inch thick wedges. Toss with lemon juice in a large mixing bowl.
  3. Make the apple filling: Add granulated sugar, cornstarch, cinnamon, nutmeg, and vanilla extract to the apples. Toss until evenly coated. Spread into an 8×8-inch baking dish.
  4. Make the oat crumble topping: In a medium mixing bowl, whisk together rolled oats, all-purpose flour, brown sugar, cinnamon, and salt. Add cold cubed butter. Use a pastry cutter or fingertips to work the butter into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized butter pieces still visible. Do not overwork.
  5. Assemble the crisp: Sprinkle the oat crumble topping evenly over the apples. Do not press down.
  6. Bake for 40-45 minutes, until the topping is golden brown and the apple juices are bubbling around the edges. If the topping browns too quickly, tent loosely with foil for the remaining time.
  7. Cool on a wire rack for at least 15 minutes before serving to allow the juices to thicken.
  8. Serve warm, topped with vanilla ice cream, whipped cream, or a drizzle of heavy cream.

Notes

Use cold butter for a crispy crumble. Do not overmix the topping. Let the crisp rest for 15-20 minutes after baking to set the juices. Place a baking sheet under the dish to catch overflow. For a gluten-free version, use gluten-free all-purpose flour and certified gluten-free oats. For a dairy-free version, use cold vegan butter sticks.
