  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil or butter, melted
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/4 cup raisins or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your muffin tin with paper or silicone liners. If using paper liners, give them a quick spray with cooking spray so nothing sticks.
  2. Mix the dry ingredients. In a large bowl, combine the rolled oats, pumpkin pie spice, cinnamon, baking powder, and salt. Give it a whisk so everything is evenly distributed.
  3. Mix the wet ingredients. In a separate medium bowl, whisk together the pumpkin puree, eggs, maple syrup, milk, vanilla extract, and melted coconut oil (or butter). Whisk until smooth and fully combined.
  4. Combine wet and dry. Pour the wet mixture into the dry ingredients. Stir with a spatula until everything is just combined. Do not overmix.
  5. Fold in the mix-ins. Gently fold in the chopped pecans and any other mix-ins you are using. Reserve a few pecans to sprinkle on top for a pretty finish.
