Easy Bavarian Pretzel Bites with Beer Cheese Dip

  • 1 ½ cups (355ml) warm water (about 110°F)
  • 2 ¼ teaspoons (one packet) active dry yeast
  • 1 tablespoon granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon fine sea salt
  • ½ cup baking soda (for the bath)
  • Coarse sea salt or pretzel salt, for topping
  • 8 ounces (225g) sharp cheddar cheese, shredded
  • ¾ cup (177ml) lager or pale ale
  • 4 ounces (113g) cream cheese, softened
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon Worcestershire sauce
  • Salt and black pepper, to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water, sugar, and active dry yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until shaggy. Gradually add remaining 2 cups of flour until dough pulls away from the bowl. It should be slightly tacky but not sticky.
  3. Knead the dough: Turn dough onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic. Alternatively, use a stand mixer with dough hook on medium-low for 4-5 minutes.
  4. Let it rise: Place dough in a lightly greased bowl, cover with a towel or plastic wrap, and let rise in a warm spot for 45 minutes to 1 hour until doubled in size.
  5. Preheat and prep: About 15 minutes before dough is done rising, preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Bring 6 cups of water to a boil in a large pot, then carefully stir in ½ cup baking soda (it will foam). Reduce heat to a gentle simmer.
  6. Shape the bites: Punch down dough and turn onto a lightly floured surface. Divide into 4 equal pieces. Roll each into a 1-inch thick rope, then cut into 1-inch pieces (about 20-24 per rope).
  7. Baking soda bath: Drop pretzel bites into simmering baking soda water in batches (8-10 at a time). Boil for 30 seconds, flip, and boil another 30 seconds. Remove with slotted spoon and place on prepared baking sheet, spacing 1 inch apart.
  8. Score and salt: Cut a shallow ‘X’ on top of each bite. Sprinkle generously with coarse sea salt while still wet.
  9. Bake: Bake for 12-15 minutes, rotating sheet halfway through, until deep golden brown and puffed.
  10. Butter bath: As soon as bites come out of oven, brush with melted butter. Let cool on baking sheet for 5 minutes before serving.
  11. Make the beer cheese dip: In a small saucepan over medium-low heat, combine beer and cream cheese. Whisk until smooth. Gradually add shredded cheddar, whisking constantly until melted. Stir in Dijon mustard, garlic powder, and Worcestershire sauce. Season with salt and pepper. Keep warm over low heat until serving.

Notes

Don’t skip the baking soda bath—it gives pretzels their signature crust. For the beer cheese dip, use low heat and shred cheese yourself for smoothest melt. Make dough the night before for a cold rise that develops more flavor. For gluten-free, use a 1:1 gluten-free flour blend with xanthan gum.
