These quick and easy turkey sushi rolls are a fun, no-bread lunchbox solution that kids love. Made with simple ingredients like tortillas, cream cheese, turkey, and veggies, they come together in under 10 minutes and stay fresh until lunchtime.

Ingredients

  • Flour tortillas (8-inch or 10-inch)
  • Cream cheese (4 oz, softened)
  • Sliced turkey (4-6 slices)
  • Cheddar cheese (2-3 slices or 1/2 cup shredded)
  • Cucumber (1/4 of a large cucumber, cut into thin strips)
  • Lettuce (2-3 large leaves, ribs removed)
  • Optional spreads: mayo or mustard (thin layer)

Instructions

  1. Soften cream cheese by taking it out of the fridge 15-20 minutes before starting.
  2. Wash and thoroughly dry lettuce leaves. Cut cucumber into thin matchsticks about 3 inches long and as thick as a pencil.
  3. Lay one flour tortilla flat on a cutting board. If stiff, microwave for 10 seconds to make pliable.
  4. Spread a thin, even layer of cream cheese all the way to the edges of the tortilla.
  5. Place 1-2 slices of turkey flat on the lower third of the tortilla, closest to you. Top with a slice of cheese (or sprinkle of shredded cheese), a lettuce leaf, and a few cucumber sticks. Do not overstuff.
  6. Fold the bottom edge of the tortilla over the fillings, tucking it in snugly. Roll away from you, keeping it tight but not so tight that fillings squish out. The cream cheese will help it stick closed.
  7. Place the roll seam-side down on the cutting board and press gently to seal.
  8. Optional: Wrap the roll in plastic wrap and refrigerate for 5-10 minutes to firm up the cream cheese for easier slicing.
  9. Using a serrated knife, slice the roll into 1-inch thick pieces using a gentle sawing motion. You should get about 6-8 pieces per roll.
  10. Arrange slices in a bento box or lunch container, standing them up on their cut sides to show the spiral of fillings.

Notes

Use room-temperature cream cheese spread to the edges to seal the roll. Pat all veggies dry to prevent sogginess. For best results, slice with a serrated knife. Rolls can be assembled and refrigerated overnight, but slice fresh in the morning. Avoid freezing as cream cheese becomes watery upon thawing.
