  • 8 ounces cream cheese, softened

  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons ranch or blue cheese dressing
  • 1 pound pizza dough, store-bought or homemade
  • 3 tablespoons butter, melted
  • ½ teaspoon garlic powder
  • Optional: chopped green onions, extra hot sauce, celery sticks for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine 1 ½ cups shredded cooked chicken, 8 ounces softened cream cheese, ⅓ cup hot sauce, 1 cup shredded cheddar, ½ cup shredded mozzarella, and 2 tablespoons ranch or blue cheese dressing. Mix until well combined and creamy. Adjust hot sauce to taste.
  3. Lightly flour a clean counter or cutting board. Divide 1 pound of pizza dough into 20 equal pieces, each about the size of a golf ball.
  4. Flatten each piece of dough into a 3-inch circle, about ¼ inch thick.
  5. Place about 1 tablespoon of the buffalo chicken filling in the center of each dough circle. Gather the edges and pinch them together firmly to seal. Roll the sealed ball gently between your palms to smooth it out.
  6. Arrange the stuffed bites seam-side down on the prepared baking sheet, leaving about 2 inches of space between each one.
  7. In a small bowl, mix 3 tablespoons melted butter with ½ teaspoon garlic powder. Brush this mixture generously over the tops of each bite.
  8. Bake for 14-16 minutes, or until the tops are deep golden brown and the filling is bubbling.
  9. Let them rest for 5 minutes before serving.
  10. Garnish with chopped green onions and serve warm with extra ranch or blue cheese dressing for dipping. Celery sticks on the side add a nice fresh crunch.

For air fryer: cook at 375°F (190°C) for 8-10 minutes, flipping halfway. Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze unbaked bites on a baking sheet, then transfer to a freezer bag; bake from frozen at 400°F for 18-20 minutes.
