  • 4 tablespoons unsalted butter
  • 1 package (10 oz) marshmallows
  • 1 cup candy corn
  • 1/4 teaspoon vanilla extract (optional)
  • Pinch of salt (if using unsalted butter)

Instructions

  1. Prepare your pan. Line a 9×13-inch baking pan with parchment paper, leaving some overhang on two sides. Lightly spray the parchment with cooking spray. Set aside.
  2. Melt the butter. Place your large pot over medium-low heat. Add the 4 tablespoons of butter and let it melt slowly. Swirl the pot occasionally. You want it fully melted but not browning—foaming is fine, but if it turns brown, you’ve gone too far. This takes about 2-3 minutes.
  3. Add the marshmallows. Pour the entire 10-ounce bag of marshmallows into the melted butter. Stir constantly with your rubber spatula. The marshmallows will start to puff up and then collapse into a gooey mess. Keep stirring until completely smooth—about 4-5 minutes. The mixture should be glossy and stretchy.
  4. Remove from heat. Take the pot off the burner immediately. Stir in the vanilla extract and a pinch of salt if you’re using unsalted butter.
  5. Add the cereal. Pour in the 6 cups of Rice Krispies cereal. Fold gently with your spatula until all the cereal is coated. Be careful not to crush the cereal too much; this should take about 1 minute.
  6. Fold in the candy corn. Add 1 cup of candy corn and fold it in gently. You want the candy corn distributed evenly, but try not to overmix or the colors will bleed. Aim for about 10-12 folds.
  7. Press into the pan. Transfer the mixture to your prepared pan. Wet your spatula or your hands with a little water, then press the mixture down evenly. Don’t press too hard—you want them soft, not compacted. Aim for an even layer about 1 inch thick. This takes about 2 minutes.
  8. Let them set. Let the treats cool at room temperature for at least 30 minutes. Don’t rush this step.
  9. Cut and serve. Once completely cool, lift the treats out using the parchment paper overhang. Place on a cutting board. Use a sharp knife sprayed with cooking spray to cut into squares. I usually go for 12 large squares or 24 smaller ones. Wipe the knife clean between cuts for neat edges.

Notes

Use fresh marshmallows and candy corn for best results. Wet your spatula or hands with water to prevent sticking when pressing the mixture into the pan. Do not refrigerate; store in an airtight container at room temperature for up to 5 days. For a dairy-free version, use vegan marshmallows and plant-based butter. For gluten-free, check that the cereal is labeled gluten-free.
