Instructions

  1. Prep Your Popcorn: Start with 10 cups of popped popcorn. If using microwave popcorn, pop one standard bag and pick out any unpopped kernels. If air-popping, use about 1/2 cup of kernels. Spread the popcorn on your prepared baking sheet in a single layer and pick out any unpopped kernels. Let the popcorn cool completely.
  2. Melt the White Chocolate: Place white chocolate melting wafers or chips in a microwave-safe bowl. Microwave in 30-second intervals at 50% power, stirring thoroughly between each interval, until almost completely melted (about 2 to 3 minutes total). Stop microwaving and stir until residual heat finishes melting. If using white chocolate chips and they seem thick, stir in 1/2 teaspoon vegetable oil or coconut oil to thin it out.
  3. Combine Popcorn and Chocolate: Pour the melted white chocolate over the cooled popcorn in a large mixing bowl. Use a spatula to gently fold everything together, working from the bottom up to coat as many pieces as possible. Don’t stir too aggressively to avoid breaking the popcorn.
  4. Add the Candy Corn: Gently fold in 1 1/2 cups of candy corn. Add about half while the chocolate is still warm so it sticks, then press the remaining pieces on top after spreading the mixture on the baking sheet. If adding pretzels or dried fruit, fold them in at the same time as the first batch of candy corn.
  5. Spread and Set: Transfer the coated popcorn mixture to a prepared baking sheet lined with parchment paper or a silicone baking mat. Spread it out in an even layer, about 1/2 to 3/4 inch thick.
