  • ¼ cup packed light brown sugar

  • ½ cup heavy cream (or canned coconut cream for dairy-free)
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 1 cup old-fashioned rolled oats
  • ¾ cup all-purpose flour (or 1:1 gluten-free baking flour blend)
  • ½ cup packed light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat oven to 375°F (190°C). Position rack in the center.
  2. Make the caramel sauce: In a large skillet over medium heat, melt 3 tablespoons butter. Add granulated sugar and brown sugar. Stir constantly until melted and bubbling, about 3-4 minutes. Slowly pour in heavy cream while stirring (it will bubble up). Stir until smooth, then remove from heat. Stir in vanilla extract and sea salt. Set aside to cool slightly.
  3. Prepare the apples: In a large bowl, toss sliced apples with lemon juice. Pour slightly cooled caramel sauce over apples and toss gently to coat. Let sit for 5 minutes.
  4. Make the oat crumble: In a medium bowl, combine rolled oats, flour, brown sugar, cinnamon, nutmeg, and salt. Whisk to break up lumps. Add cold butter cubes. Use fingers or pastry cutter to work butter into dry ingredients until mixture resembles coarse meal with some pea-sized butter pieces. Do not overwork.
  5. Assemble the crisp: Pour caramel-coated apples into a 9×13-inch baking dish and spread into an even layer. Sprinkle oat crumble evenly over the top. Do not press down.
  6. Place dish on a baking sheet. Bake for 35-40 minutes, until filling is bubbly around edges and topping is deep golden brown. If topping browns too quickly after 25 minutes, tent loosely with foil.
  7. Cool on a wire rack for at least 15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

Toast the oats first at 350°F for 8-10 minutes for extra crunch. Use cold butter for the crumble. Let the crisp rest for at least 15 minutes before serving to allow the filling to set. If caramel seizes, add a splash of warm cream and whisk over low heat.
