  • 1½ cups low-sodium chicken broth

Instructions

  1. Pat the chicken thighs dry with paper towels. Trim excess fat, season lightly with salt and pepper.
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, and sesame oil (if using). Adjust sweetness or saltiness to taste.
  3. Place chicken thighs in a single layer in a 6-quart slow cooker. Pour sauce over chicken, coating each piece.
  4. Cover and cook on LOW for 4 hours or HIGH for 2½ hours. Flip chicken halfway through. Chicken is done when it shreds easily with a fork.
  5. Remove chicken to a plate and cover loosely with foil. Pour chicken broth into the crockpot and stir in rice, ensuring it is submerged.
