This easy dump and go crockpot chili is the recipe you’ll come back to again and again. It’s forgiving, flexible, and requires almost no effort—perfect for those days when you need dinner to just happen.

  • 1 lb ground beef (80/20 recommended)
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • 3 cloves garlic, minced
  • 14.5 oz canned diced tomatoes (fire-roasted preferred), undrained
  • 8 oz canned tomato sauce
  • 15 oz canned kidney beans, drained and rinsed
  • 15 oz canned black beans, drained and rinsed
  • 1 cup beef broth (low-sodium recommended)
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika (optional)
  • ½ teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional toppings: shredded cheddar cheese, sour cream, chopped green onions, fresh cilantro, diced avocado, lime wedges

Instructions

  1. Dice the onion and bell pepper into small, even pieces (about ½ inch). Mince the garlic.
  2. Add the ground beef to the crockpot, breaking it into large chunks with your hands or a spoon.
  3. Scatter the diced onion, bell pepper, and minced garlic over the beef.
  4. Pour in the diced tomatoes (with their juice), tomato sauce, drained kidney beans, and drained black beans.
  5. Pour in the beef broth.
  6. Sprinkle the chili powder, cumin, smoked paprika, oregano, salt, and pepper over the top.
  7. Stir everything together with a wooden spoon until the spices are evenly distributed and the beef is broken into smaller pieces.
  8. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  9. About 30 minutes before serving, stir and taste. Adjust salt, pepper, or chili powder as needed.
  10. Ladle into bowls and serve with desired toppings.

Notes

For a thicker chili, start with ¾ cup broth. Let chili rest on WARM for 15-20 minutes before serving for best flavor. Freezes well in portions for up to 3 months. To thicken, remove lid and cook on HIGH for 20-30 minutes. To thin, add a splash of broth or water.
