Easy Football Party Chorizo Queso Dip

A quick, crowd-pleasing chorizo queso dip made with Velveeta, cream cheese, and Ro*Tel, ready in under 30 minutes. Perfect for game day or any gathering.

  • 1 pound fresh Mexican chorizo (casings removed if in links)
  • 1 block (16 ounces) Velveeta cheese, cut into 1-inch cubes
  • 1 can (10 ounces) Ro*Tel diced tomatoes and green chilies, undrained
  • 8 ounces cream cheese, softened and cut into chunks
  • 1 teaspoon ground cumin
  • Optional: 1/4 cup milk or half-and-half
  • Optional garnishes: fresh cilantro, sliced jalapeños, diced white onion

Instructions

  1. Prep your ingredients first. Cube the Velveeta and cream cheese into roughly 1-inch chunks. Open the can of Ro*Tel.
  2. Brown the chorizo. Place your large skillet over medium-high heat. Add the chorizo, breaking it apart with your wooden spoon as it hits the pan. Cook for 6-8 minutes, stirring occasionally, until the meat is browned and crispy at the edges. Remove the chorizo with a slotted spoon and set aside, leaving the oil in the pan.
  3. Toast the cumin. Reduce the heat to medium and add the ground cumin to the hot chorizo oil. Stir constantly for about 30 seconds until fragrant.
  4. Start the cheese base. Transfer the seasoned oil to your saucepan or Dutch oven. Add the cubed Velveeta, cream cheese, and the entire can of undrained Ro*Tel. Stir together gently.
  5. Melt slowly. Cook over medium-low heat, stirring frequently, for 5-7 minutes until the cheeses are completely melted and the mixture is smooth and creamy.
  6. Add the chorizo back. Stir in the browned chorizo. Reserve a small handful for topping if desired.
  7. Adjust consistency. If the queso seems too thick, stir in milk or half-and-half one tablespoon at a time until it reaches your desired dipping consistency.
  8. Finish and serve. Transfer to a serving bowl. Top with reserved chorizo, fresh cilantro, sliced jalapeños, and diced white onion if using. Serve immediately with tortilla chips.

Notes

Don’t rush the chorizo browning for best flavor. Melt cheese over low heat to avoid graininess. For a smoother texture with real cheese, toss shredded cheese with cornstarch before melting. Keep warm in a slow cooker for longer events.
